6 Bone-in, Skinless Chicken Thighs

    1/2 cup breadcrumbs (I use Progresso or Old London, unseasoned)

    1 teaspoon curry powder

    1 teaspoon cumin

    1 teaspoon chili powder

    1 teaspoon paprika

    1 teaspoon salt

    1/4 teaspoon pepper

 

Preheat oven to 400 degrees. Combine breadcrumbs and spices in a gallon-size plastic bag. Place chicken thighs, three at a time, in the bag and shake until coated with spice mixture.  Place thighs on a sheet pan, or baking dish, and bake in oven for 20 minutes...turn the chicken thighs and bake on other side for another 15-20 minutes.  Delicious!  A salad and couscous are perfect accompaniments to this tasty dish.
