Paul Dolan 2006 Chardonnay – A cool-site vineyard north of Lake Mendocino, and a warmer-site vineyard near the Russian River in Hopland, combined to make this elegant
wine. Pear and winter citrus fruit character is complemented by creamy vanilla spice. Executive Chef Paul O’Connor has paired this fruitful wine with Organically Grown Grapes, will be paired with Pacific Halibut and Organic Baby Romaine Salad.
Parducci, True Grit, Petite Sirah 2004 - Heady aromas of ripe fruit, white pepper and vanilla are followed by an intense rush of fresh blackberry, dark chocolate, pepper and caramel flavors. True Grit is a natural mate for seared steak, sausage, grilled pork loin, and smoked meats and Executive Chef Paul O’Connor has paired this Petite Sirah with Black Angus Filet Medallion with Blue Cheese Crust on top of Forest Mushrooms.
Paul Dolan, Deep Red, Biodynamic Red Wine 2004 - Our vineyard soils are Deep Red, and consequently so is this wine. Deep Red has ripe, round red fruit aromas and deep
flavors with complex earthy spice notes. This Biodynamic Red Wine has been paired with Chef O’Connor’s selection of Organic Artisan American Crafted Cheeses with Quince jam, Bartlet pear, pickled cornichons, candied pecans and chocolate truffles.
