CORDÓN NEGRO 
Tasting Notes: A light, very modern cava, much appreciated for its refreshing style,
created from a special blend of the three traditional, indigenous
Penedes white varieties.
The fruity character of this Cava is derived in great part from the
low fermentation temperatures, between 14 and 16°C, which allow
a great percentage of the natural grape aromas to be retained in the
finished wine.
Pale yellow, with bright hints of green. A fine, persistent and abundant
sparkle lifting to a good crown.
Fine, delicate aromas, combining tones of green apple and pear, with
light resonances of Mediterranean fruits – peach, melon and pineapple,
over a base of citrus, all beautifully balanced by light toasty aromas
from bottle maturation.
The palate is refreshing, the sparkle balancing the green and citrus
fruits. It is light but long and elegant.
The Cordon Negro Brut has a blend of 3 grapes and the Rosado is Trepat and Garnacha.

CORDÓN ROSADO
Tasting Notes: Bright strawberry pink, with an abundant mid sized bubble, which rises quickly in the glass, and forms a good crown at the top of the glass. The nose is wonderfully fruity, as a result of the low fermentation temperatures between 15 and 17°C, which allow most of the primary grape aromas to be retained. There are rich floral and fresh bay leaf aromas from the Garnacha, blending with ripe red fruits, blackberry and strawberry, as well as exotic grenadine, dried figs and dates from the Trepat. All these combine with elegant notes of medium term bottle ageing. The palate is fresh and light, soft and appealing. The red fruits, typical of the Rosado cavas and still wines of the region dominate the palate. We produce three separate dosage levels for this Cava: Brut, Dry and Medium Dry
“IL” Prosecco
Tasting Notes: The base wine for this cava is made from Chardonnay, Macabeo, Parellada, and Pinot Noir. Cultivated in the family vineyard 'La Freixenada.' The Chardonnay grape is an early ripening fruit with the harvest beginning in the middle of August. Wines from this variety are extremely elegant, giving floral aromas of acacia and sweet honey as well as ripe pineapple and peach. Elyssia Gran Cuvee Brut is a delicious expression of symmetry with its unique blend of traditional Macabeo and Parellada Cava grapes with international favorites Chardonnay and Pinot Noir. Most of the grapes for this superb sparkling wine are cultivated in the Freixenet family vineyard, 'La Freixenada,' in Sant Quinti de Mediona, where the chalky strata forms a rich, productive soil.
The Result? A wonderfully sophisticated wine with a complex bouquet of roasted nuts, citrus fruit, and honey that carries through to the palate, delivering a brilliant kaleidoscope of flavors and finishing with a spicy encore.
