Returning for another summer of fun is Gary Lasko, owner of The Stockyards Restaurant and 1889 Saloon, Michael Shea, Executive Chef, and Jeff McCarty, our friend from Alliance Beverage Estate and Fine Wine Specialist and Journeyman. Beth and Bill will be sampling Wild Boar and Venison Sausage with Apple-Cranberry Chutney, Skillet Salmon with Citrus Chile Glaze, 20 oz. Bone-in Buffalo Rib eye with Twice Baked Potato, and Seasonal Berry Shortcake with Fresh Whipped Cream. The delicious food samplings will be paired with Sonoma Cutrer Russian Ranches Chardonnay 2007, Louis Martini Napa Valley Cabernet Sauvignon 2005, and Rombauer Zinfandel 2006.


Sonoma Cutrer Russian Ranches Chardonnay 2007

Russian River Ranches is a cuvée crafted from several estate vineyards, each contributing its own distinct personality. The gentle elevation, moderate temperatures and fine sandy clay loam of Vine Hill make it ideal for growing Chardonnay.

Pretty aromas of jasmine and rose petal give way to tropical fruits like pineapple and mango. Roasted hazelnut joins nougat and almond butter, finishing with a touch of lime and lychee. Medium-weight and clean with a wonderful acid backbone, the wine expands in the glass, offering up grapefruit, lemon, pear and kumquat with subtle vanilla bean and herbal mushroom. The lingering finish displays hints of minerality, along with apple, lime and a surprising kiss of strawberry. A market basket of aromas and flavors.

Pairing tip: A perfect complement to poultry, fresh sea bass or halibut - especially when finished with cream or butter - or rich, buttery cheeses like young Gouda.




Louis Martini Napa Valley Cabernet Sauvignon 2005


The 2005 Louis M. Martini Napa Valley Cabernet Sauvignon delivers the highest quality from premium Napa Valley vineyards and exhibits a deep garnet, color with intense aromas of cedary oak, currents and black cherries. Concentrated flavors of ripe plums, chocolate and tobacco marry perfectly with the oak nuances. A well structured wine that is balanced with firm, velvety tannins that culminate in a long, elegant finish. This wine is ready to enjoy now or can be aged 3-5 years.
Varietals: 94% Cabernet Sauvignon, 0.5% Merlot, 0.25% Cabernet Franc, 0.6% Petite Verdot, 4% Petite Sirah.

Rich, vibrant, and juicy, this wine boasts aromas of cherry and wild berry, with soft notes of black pepper. Tightly packed layers of cranberries, wild berries, and ripe cherries flow together with a touch of allspice for a rich, full flavor. Moderate tannins show in the rich, mouth filling finish.
